Preheat oven to 350 degrees.
Prepare a baking sheet by layering it with parchment paper or a silicone baking sheet.
In a large mixing bowl mix... flour, baking soda, baking powder, and cinnamon, mix thoroughly. Set aside.
Warm up butter for 30 second to a minute (unless the butter is already softened). Add butter to a medium mixing bowl. Add brown sugar, and applesauce to butter and mix thoroughly.
Add eggs and vanilla extract, mix thoroughly.
Add the wet ingredient mixture to the dry ingredients. Mix thoroughly.
OPTIONAL: Add pecans and gently mix.
On prepared baking sheet, scoop 1 tablespoon spoonfuls with about a 2 inch separation between each scoop.
Cook for 10 minutes at 350 degrees.If they don’t look cooked enough, or cooked at all, put them in the oven for a bit more. They will cook slightly after being taken out of the oven, so keep that in mind. Once taken out of the oven let cool for 2 minutes on baking sheet before moving them to a cookie rack.
OPTIONAL: Sprinkle cookies lightly with cinnamon/sugar while still warm.
