2-Ingredient Lemon Muffins

These 2-Ingredient muffins are light and sponge-like and are the perfect treat to pop in your mouth when you need a quick sugar fix. As a decorative addition sprinkle a little bit of powdered sugar over the muffins to pull them all together.

Ingredients
  

  • 1 Box Lemon Cake Mix
  • 1 20 oz Can Lemon Pie Filling 16oz-25oz cans will work
  • OPTIONAL Powedered Sugar

Method
 

  1. Pre-heat the oven per the instructions on the back of the cake box (Usually 350F).
  2. In a medium sized mixing bowl combine the Lemon Cake Mix and the Can of Lemon Pie Filling.
  3. Grease a mini cupcake container and fill each cupcake spot 3/4s of the way full.
  4. Place the muffins in the oven and bake per the instructions on the cake box (about 10 minutes).
  5. Allow the muffins to cool for 2-5 minutes before taking them out of the muffin tin and cooling for an additional 5-10 minutes.
  6. OPTIONAL: Lighty sprinkle powdered sugar over the muffins.
  7. Store the muffins in the fridge.
