These 2-Ingredient lemon muffins are SO easy and simple to make. This recipe was more of an experiment for me and came from my love of lemon-flavored things. I was pleasantly surprised when I first tasted the treat and realized how delicious they were.

In order to make these muffins all you need is a box of lemon cake mix and a can of lemon pie filling. Literally, those are the only 2-Ingredients you need! You simply mix the two ingredients together in a mixing bowl. I recommend using a spatula as it will assist in combining the ingredients.

After mixing the ingredients, fill greased mini cupcake tins 3/4 of the way full. After the cupcake tins are all full, bake them in the oven according to the back of the cake box (usually about 10 minutes at 350 degrees F).

These muffins are light and sponge-like and are the perfect treat to pop in your mouth when you need a quick sugar fix. As a decorative addition sprinkle a little bit of powdered sugar over the muffins to pull them all together.

I recommend storing these muffins in the fridge to avoid them sticking to each other (I learned this the hard way).

Seriously, these muffins are delicious and are totally worth a try. Not to mention they take only 15 minutes to make!

Ingredients
  

  • 1 Box Lemon Cake Mix
  • 1 20 oz Can Lemon Pie Filling 16oz-25oz cans will work
  • OPTIONAL Powedered Sugar

Instructions
 

  • Pre-heat the oven per the instructions on the back of the cake box (Usually 350F).
  • In a medium sized mixing bowl combine the Lemon Cake Mix and the Can of Lemon Pie Filling.
  • Grease a mini cupcake container and fill each cupcake spot 3/4s of the way full.
  • Place the muffins in the oven and bake per the instructions on the cake box (about 10 minutes).
  • Allow the muffins to cool for 2-5 minutes before taking them out of the muffin tin and cooling for an additional 5-10 minutes.
  • OPTIONAL: Lighty sprinkle powdered sugar over the muffins.
  • Store the muffins in the fridge.
