Looking for a simple, chewy, chocolate chip cookie recipe that happens to be vegan? Try this recipe.

Recently one of our sisters has switched to a vegan diet. This has given us the chance to create different vegan baked goods for her to enjoy. After figuring out a few substitutes we were able to change our chocolate chip cookies into a vegan alternative.

These cookies are delicious. Biting into them you would have no idea they are vegan. They are chewy and gooey while still being a little crunchy on the outside. My sister enjoyed them but I must say my dad was the one who ate the majority of these cookies.

After doing research Liora and I figured out that coconut oil and applesauce are perfect substitutes for eggs and butter. Some coconut oil will taste like coconut while others do not, take this into account when buying/choosing the oil.

When adding chocolate chips feel free to add or take away based on preference. (We are a chocolate loving family, so we like chocolatey cookies).

I highly recommend not overcooking the cookies. Sometimes when cookies come out of the oven they still feel doughy, however, if they are left on the cookie sheet they will continue to bake for awhile. As a result, when baking cookies do not take them out of the oven when they are the consistency you want, take them out just before they reach the desired consistency. We learned this the hard way…

Liora and I made the cookies without incident (surprisingly). I’m taking that to mean it’s a fairly simple recipe to make. Lately it’s been fun to see Liora learn different tricks and skills in the kitchen. She is turning into quite the baker! Although somehow I still get stuck cleaning up the kitchen after the baking is done…

Overall this was a fun recipe to bake. It’s always nice to have recipes on hand that can be enjoyed by people who have allergies or are on specific diets. These chocolate chip cookies for perfect for anyone following a vegan diet.

Vegan Chocolate Chip Cookies

These cookies are chewy, delicious, and vegan!

Ingredients
  

  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup coconut oil
  • 1 cup brown sugar
  • 1/4 cup applesauce
  • *2 tbsp vegetable oil *optional
  • 3/4 tsp vanilla extract
  • 3/4 cups allergen free chocolate chips (vegan)

Instructions
 

  • Heat the oven to 350°F. Line a baking sheet with parchment paper or a baking sheet.
  • Place 1 1/4 cup flour, 1/2 tsp baking soda, and 1/4 tsp salt together in a medium bowl; set aside.
  • Place 1/4 cup coconut oil, and 1 cup brown sugar in large bowl. Beat until light and fluffy, 2-3 minutes. Add 1/4 cup applesauce and mix. *Add 2 tbsp oil (this is optional, it will make the cookies more chewy) and 3/4 tsp vanilla extract, beat until blended.
  • Add the flour mixture to the wet ingredients. Mix until the flour is mixed in. Add 3/4 cup chocolate chips, beat on high speed for a few seconds.
  • Drop the dough by large spoonfuls onto the prepared baking sheet. Leave in ball shape (don’t flatten). Bake for 10 to 11 minutes. They will continue to cook on the pan. Leave on pan for 2 minutes before transferring to a cooling rack.
