I wanted to invent a christmas themed cookie, I thought, and thought, AND thought! Then it hit me… Candy cane cookies! But not the kind that are shaped like candy canes, but a kind of cookie that actually TASTES like candy canes.
The Candy cane cookies turned out tasting just like candy canes! But they bake like sugar cookies. The cookies are chewy and minty, literally all you taste is the peppermint. There are some crunchy places from the candy cane chunks, but the small chunks melt in the oven.
You can find crushed candy canes at some stores, but not all. I put candy canes in a bag and used a rolling pin to crush them, but not all candy canes work that way. You might have to put some in a blender to crush ‘em, but you have to blend them for less than 7 seconds, you do NOT want them to turn to dust.
I hope you will try and love these cookies, have fun!
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or a silicone baking mat.
Get 1 large bowl and 1 medium bowl. Set the medium bowl aside.
In the large bowl add 2 cups flour, 1/2 tsp baking powder, 1 tsp baking soda, 1 tsp salt, 1 tbsp cornstarch, and 1 cup crushed candy cane. Mix thoroughly.
Warm up the butter for 30 seconds to 1 minute (unless butter is at room temperature). In the medium bowl mix 3/4 cup butter, 1/2 cup granulated sugar, and 1/4 cup brown sugar together.
To the medium bowl mixture add 1 tsp vanilla extract, and 2 eggs. Mix thoroughly.
Add the medium bowl ingredients to the large bowl. Mix thoroughly
Make 1 inch balls and put them on the prepared baking sheet about 2 inches separated. Cook for 15 minutes at 350 degrees. If the cookies don’t look cooked enough, put them back in the oven for a few minutes more.
These cake balls have the perfect hint of peppermint, mixed with the texture of cake, surrounded by a chocolatey crunch. Not to mention they are a fun, if not a bit messy, treat to make! Knowing that Christmas was coming up peppermint was on the …

These cookies are kinda cake-like and chewy, they’re not quite brown, but they’re not too light.
These cinnamon cookies ended up being SO delicious! I invented the recipe myself, it was only a ten minute prep time, and a ten minute bake time, that’s only twenty minutes! The recipe made about twenty-four cookies.
When I was getting the ingredients ready, I realized I didn’t have enough butter! We only had 2 tablespoons of butter left! And we needed 1\2 cup! { 1 stick } So I looked up what was a substitute for butter, and guess what! Applesauce was able to be used as a substitute! You could kinda taste the apple in the end, but it was REALLY good! It kinda tasted like cinnamon apple cookies!
I was REALLY happy with how they turned out, they are SO good, I hope you will try this recipe, I’m sure you will be happy with what you turn up with too!
My family LOVES these cookies! As a bonus, when you take the cookies out of the oven, they make a sweet cinnamon smell travel through the house, you can really tell that someone baked cookies!
Prepare a baking sheet by layering it with parchment paper or a silicone baking sheet.

Warm up butter for 30 second to a minute (unless the butter is already softened). Add butter to a medium mixing bowl. Add brown sugar, and applesauce to butter and mix thoroughly.
Add eggs and vanilla extract, mix thoroughly.
Add the wet ingredient mixture to the dry ingredients. Mix thoroughly.
OPTIONAL: Add pecans and gently mix.
On prepared baking sheet, scoop 1 tablespoon spoonfuls with about a 2 inch separation between each scoop.
Cook for 10 minutes at 350 degrees. If they don’t look cooked enough, or cooked at all, put them in the oven for a bit more. They will cook slightly after being taken out of the oven, so keep that in mind.
Once taken out of the oven let cool for 2 minutes on baking sheet before moving them to a cookie rack.
OPTIONAL: Sprinkle cookies lightly with cinnamon/sugar while still warm.
